Caramelised Onion Relish & Goats Cheese Tarts
INGREDIENTS
Women's Work Caramelised Onion Relish
Goats Cheese
Mushrooms
Garlic
Olive oil
Rosemary
Salt & Pepper
Balsamic Glaze
GRANNY IDA’S SHORTCRUST INGREDIENTS
250g plain flour
Pinch salt
100 -150g room temp butter
Cold water
GRANNY IDA'S SHORTCRUST PASTRY METHOD
- Sift flour into bowl
- Add salt
- Cut butter into cubes and rub into the flour using the tips of your fingers until mixture resembles breadcrumbs.
- Gradually add small amounts of water and mix with the blade of a knife until the pastry pulls together.
- Briefly knead and add more flour if too sticky and more water if too dry.
- Let pastry rest in fridge for 1 hour.
- Roll out on a floured board and use as required.
TARTLET METHOD
- Pre-heat oven to 180 degrees
- Slice mushrooms and brush with olive oil, garlic, S&P & rosemary. Roast in the oven till soft. Remove when cooked and chop into small cubes.
- Cut your prepared pastry into circles to fit your muffin baking tray and push into each mold to make a little cup. Bake for 5-10 mins until golden.
- When your pastry cups have cooled slightly add a dollop of goats cheese followed by a dollop of Caramelised Onion Relish, fill the cup with the chopped mushroom, another sprinkle of goats cheese and a drizzle of balsamic glaze.
- Back into the oven for 5-10 minutes to warm before serving.
