Caramelised Onion Relish & Goats Cheese Tarts

INGREDIENTS

Goats Cheese
Mushrooms
Garlic
Olive oil
Rosemary
Salt & Pepper
Balsamic Glaze
GRANNY IDA’S SHORTCRUST INGREDIENTS
250g plain flour
Pinch salt
100 -150g room temp butter
Cold water
 

GRANNY IDA'S SHORTCRUST PASTRY METHOD

  1. Sift flour into bowl
  2. Add salt
  3. Cut butter into cubes and rub into the flour using the tips of your fingers until mixture resembles breadcrumbs.
  4. Gradually add small amounts of water and mix with the blade of a knife until the pastry pulls together.
  5. Briefly knead and add more flour if too sticky and more water if too dry.
  6. Let pastry rest in fridge for 1 hour.
  7. Roll out on a floured board and use as required.
TARTLET METHOD
  1. Pre-heat oven to 180 degrees
  2. Slice mushrooms and brush with olive oil, garlic, S&P & rosemary. Roast in the oven till soft. Remove when cooked and chop into small cubes.
  3. Cut your prepared pastry into circles to fit your muffin baking tray and push into each mold to make a little cup. Bake for 5-10 mins until golden.
  4. When your pastry cups have cooled slightly add a dollop of goats cheese followed by a dollop of Caramelised Onion Relish, fill the cup with the chopped mushroom, another sprinkle of goats cheese and a drizzle of balsamic glaze. 
  5. Back into the oven for 5-10 minutes to warm before serving.
